Healthy Living

I joined a committee for a new farmers market. I'm an administrator for the facebook page and web girl of the website. I heard about it from a friend and was so excited to have a farmers market nearby that I volunteered to help. It's been a lot of fun and I really like all the women I've met. The grand opening was yesterday and it went extremely well which reflects the organization of the committee. I'm so impressed by the focus and dedication of everyone - it's so nice to be surrounded by them. Many of the vendors sold out quickly despite of the fact that it poured the first 30 minutes. It was awesome that the rain didn't deter people from coming. We project on a sunny day, we'll have twice as many people.

5 weeks ago I started incorporating a lot of raw food (I'd say about 80%) into my diet again. I've been starting each morning with a glass of freshly made fruit and vegetable juice. As result, I have way more energy with less sleep, my skin looks better, and I've lost weight. I did this last year and I don't know why I quit. As you know from my previous post, I was ignoring my gluten and dairy intolerance. Oops. I finally got to a point where I wanted to stop so eating lots of raw food was my idea of hitting the reset button. I only meant to do it for 2-3 weeks but I'm keeping it up because it feels too good not to. I made this ridiculously delicious mango breakfast cobbler by raw food guru and chef, Ani Phyo. We all love this dish that we have a 2nd serving for an afternoon snack! Trust me, you've got to try this. When you do, be sure to soak the nuts in filtered water over night and rinse before using. Doing this makes nuts soft thus digestible by our bodies. I omitted the agave syrup because I didn't want to add more sweetness to the dish that is already naturally sweet. I've made it every weekend since I first tried it a month ago because it's that good.

Wow, that looks super yummy! I can't wait until we get our food dehydrator so I can make raw granola and bread. It was a good thing to omitt the agave nectar. It is as highly processed at high fructose corn syrup, in fact in has more fructose that HFCS and can pack on the pounds.

Did you use staight up nuts or is there something else in the topping on the mango?

That looks awesome! I too have started eating healthier...again. Last year I juiced every morning and somehow fell out of the habit. How do these things happen? Here's to newfound (re-found?) motivation:)
